Where the “boiling water kills the mushrooms” claim came from

Some beta-glucans arrange themselves into a triple-helix structure, and a number of studies suggest that this shape is part of why they’re biologically interesting — that the architecture, not just the sugar, matters. From there, the logic in wellness circles ran fast: heat unwinds helices, boiling water is hot, therefore boiling water destroys the benefits. You’ll now find a widely repeated figure — that anything above 95°C denatures the triple helix — quoted with far more confidence than its evidence base earns.
Look at the primary literature and the picture is calmer. Work on the thermal behavior of mushroom beta-glucans generally finds meaningful depolymerization and helix loss at temperatures far beyond boiling — one line of research points to structural collapse after sustained exposure above roughly 150°C, a temperature you can only reach in pressurized equipment, not a ceramic mug.
