Two mushroom coffees can list the exact same four mushrooms, print the exact same milligram number on the panel, and cost roughly the same. One of them can deliver ten times the active compounds of the other.
The difference is usually one phrase buried in the ingredient line: fruiting body, or mycelium.
Almost nobody reads it. It is arguably the most consequential thing on the label. Here is what the distinction actually means, why it changes the math on your morning cup, and — because we would rather be useful than absolute — where the popular “fruiting body always wins” argument overstates its case.
What “fruiting body” and “mycelium” actually mean
A mushroom is not one organism-shaped thing. It has two very different parts.
The fruiting body is the mushroom you would recognize: the cap, the stem, the shaggy white pom of a Lion’s Mane. It is the reproductive structure, and it is where the fungus concentrates the compounds most functional-mushroom research is built around.
The mycelium is the root-like network of threads that grows underneath, through soil or wood, doing the actual feeding. It is a legitimate part of the organism and it produces real compounds of its own.
So far, so neutral. The problem is not mycelium itself. The problem is how mycelium is almost always produced for the supplement industry.
The grain problem: why “mycelium” usually means “mostly rice”
Growing fruiting bodies takes months, real substrate, and real skill. Growing mycelium takes days: you sterilize a bed of grain — typically rice or oats — inoculate it, and let the threads colonize it.
Then comes the part that changes everything. Rather than separate the mycelium from the grain, which is difficult and expensive, most manufacturers dry and grind the entire block together. The grain goes into the product. It counts toward the milligram total on the label.
This is why an ingredient line reading “Lion’s Mane mycelium 1,000 mg” can be technically honest and functionally hollow. A meaningful share of that thousand milligrams may be spent rice. Analytical work on commercial mycelium-on-grain products has repeatedly found starch making up the clear majority of the powder, with actual fungal content in the single digits by percentage.
You are not being lied to, exactly. You are being told a true number about the wrong substance.
Beta-glucans: the number that is hard to fake
There is a straightforward way to cut through the marketing, and it comes down to two similar-sounding compounds.
Beta-glucans are the polysaccharides from the fungal cell wall — the compounds most closely associated with the immune and metabolic effects people are buying mushrooms for in the first place. Alpha-glucans are starch. Rice is full of them.
The catch is that a lab measuring “total polysaccharides” counts both. A product loaded with residual grain can post an impressive polysaccharide figure that is mostly the grain talking. This is why analytical chemists developed methods specifically to separate the two — the widely used validated approach came out of work published in the Journal of AOAC International in 2016 — and why beta-glucan percentage, stated separately, became the honest brand’s disclosure of choice.
As a rough field guide: quality fruiting body extracts tend to test in the range of roughly 20–40% beta-glucans. Mycelium-on-grain products routinely come in under 10%, sometimes far under. If a label advertises a big “polysaccharide” number and never mentions beta-glucans, that omission is information.
The honest counterpoint: mycelium is not worthless
Here is where most brand-written comparisons stop, because stopping here is convenient. It is also incomplete.
Mycelium produces compounds the fruiting body does not. The clearest example is Lion’s Mane. The fruiting body contains hericenones; the mycelium contains erinacines — a chemically distinct family, with erinacine A drawing the most research attention for its effects on nerve growth factor in preclinical models. Both groups are of interest. Neither part of the mushroom contains the other’s signature compounds.
So the accurate statement is not “mycelium is fake.” It is narrower and more useful:
Pure, grain-free mycelium is a legitimate ingredient with a real, distinct compound profile. Mycelium-on-grain, sold by total weight with the substrate included, is where the dilution happens — and that describes the large majority of what is actually on the market.
If a brand isolates its mycelium from the substrate and shows you the testing, that is a defensible product. Very few do. Fruiting body extract is the safer default not because the biology is one-sided, but because the supply chain is.
What “8:1 fruiting body extract” means on the Kaizen label

How to read any mushroom coffee label in 30 seconds
- Find the word. “Fruiting body” or “mycelium”? If neither appears anywhere, assume mycelium-on-grain — brands using fruiting bodies advertise it.
- Look for beta-glucans, not “polysaccharides.” A separate beta-glucan percentage is a sign of a company that has done the testing and is not afraid of the result.
- Check for an extract ratio. 8:1, 10:1. “Mushroom powder” with no ratio usually means unextracted raw material.
- Be skeptical of proprietary blends. If four mushrooms share one combined milligram figure, you cannot know the split — and the cheapest one is almost certainly doing the heavy lifting.
- Ask for third-party testing. Mushrooms concentrate what they grow in, heavy metals included. This is not optional.
